Chicken Kyiv & Roasted Cos
Ingredients
150g unsalted butter
1 bunch continental parsley
800g chicken breast fillets
1 cos lettuce
1 lemon, cut into wedges
1 cup parmesan, finely grated
1 tbs olive oil
1 1/2 cup panko breadcrumbs
4 cloves garlic
260g sweet berry truss tomatoes
Instructions
- Preheat oven to 220°C. Grease and line a roasting pan with baking paper. Place chicken into pan and set aside.
- Place butter, parsley, garlic and 1 tsp each salt and pepper in a microwave-safe bowl. Cook on high for 1 minute or until butter melts.
- Brush lettuce with some of the butter mixture, then combine breadcrumbs, parmesan and remaining butter mixture in a bowl. Press crumb mixture onto chicken and bake for 10 minutes.
- Add lettuce and tomatoes to pan with chicken and drizzle over oil. Cook for a further 5 minutes or until chicken is cooked through and lettuce is brown around the edges. Serve with lemon wedges.
