Salmon & Leek Traybake

This easy family dinner is simple and delicious. The flaky salmon fillets and creamy potato are a perfect pairing in this oven-baked dish.

Ingredients

400g washed red potatoes, thinly sliced
2 tbs extra virgin olive oil
3 leeks, trimmed, thinly sliced
2 cloves garlic, finely chopped
1 cup frozen peas
460g Woolworths Tasmanian salmon portions, skin off
1 lemon, sliced
1/2 punnet dill, sprigs picked

Instructions

  1. Preheat oven to 220°C/200°C fan-forced. Place potato in a large roasting pan. Drizzle over half of the oil and toss to coat. Bake for 20 minutes or until just golden.
  2. Top potato with leek and garlic, then drizzle over remaining oil. Bake for 10 minutes or until leek is tender.
  3. Add peas, salmon and lemon to pan. Bake for 10 minutes or until salmon is cooked to your liking. Season with pepper. Serve scattered with dill.
