
Salmon & Leek Traybake
This easy family dinner is simple and delicious. The flaky salmon fillets and creamy potato are a perfect pairing in this oven-baked dish.
Ingredients
400g washed red potatoes, thinly sliced
2 tbs extra virgin olive oil
3 leeks, trimmed, thinly sliced
2 cloves garlic, finely chopped
1 cup frozen peas
460g Woolworths Tasmanian salmon portions, skin off
1 lemon, sliced
1/2 punnet dill, sprigs picked
Instructions
- Preheat oven to 220°C/200°C fan-forced. Place potato in a large roasting pan. Drizzle over half of the oil and toss to coat. Bake for 20 minutes or until just golden.
- Top potato with leek and garlic, then drizzle over remaining oil. Bake for 10 minutes or until leek is tender.
- Add peas, salmon and lemon to pan. Bake for 10 minutes or until salmon is cooked to your liking. Season with pepper. Serve scattered with dill.
